Oatmeal Wheat Germ Coconut Cookies

Oatmeal wheat germ coconut cookies

These tasty little cookies have everything you are looking for in a cookie. They are irresistable, toasty, nutty, tender yet chewy, with flavors that blend admirably together. Yields about 20 cookies.

Ingredients
  • ¾ cup rolled oats
  • ½ cup butter
  • ¾ cup brown sugar, packed, or sucanat
  • 1 egg, beaten
  • 1½ teaspoons vanilla essence
  • ½ teaspoon salt
  • 1 cup whole wheat flour
  • ¾ teaspoon baking powder
  • ½ cup toasted wheat germ
  • ¾ cup raisins
  • ¾ cup chopped coconut
  • ¾ cup toasted sunflower seeds or chopped walnuts
  • 1 tablespoon canola oil
Directions
  1. Preheat oven to 375 °F
  2. Cream butter and sugar til fluffy and add vanilla, egg, salt, canola oil and beat well
  3. Stir flour, baking powder, wheat germ, raisins and oats together
  4. Blend all ingredients, adding a tablespoon or more of water as needed to hold the mixture together
  5. Put tablespoons of the mixture onto a greased cookie sheet, and slightly flatten the dollops
  6. Bake 12-15 minutes
