Oatmeal Tahini Cookies

Oatmeal Tahini cookies

Another very simple recipe but with incredibly tasty results. These cookies come out nutty, chewy and with a crisp underside that will have you coming back for more! Yields about 15-20 small, yet highly efficient cookies.

Ingredients
  • 1 ½ cup rolled oats
  • 6 tablespoons tahini (sesame paste)
  • ½ cup sunflower seed kernels
  • ½ cup honey
  • ½ cup sultanas (optional)
  • ¼ cup dried chopped pitted cherries (optional)
Directions
  1. Blend together well the tahini and honey
  2. Toast sunflower kernels until slightly brown
  3. Stir toasted sunflower kernels and oats into honey/tahini
  4. Drop tablespoon-sized blobs of mixture onto oiled sheet pan
  5. Bake at 350 °F for 10 minutes or until edges are brown
  6. Let cool on baking sheet pan several minutes
  7. Carefully remove to a cooling rack
  8. The cookies will stick to the sheet pan pan if allowed to cool for too long. If that happens heat the pan a little in the oven before removing cookies.
