Oatmeal Soufflé

This soufflé with oatmeal might surprise you with its light fluffly texture and well rounded flavour. This dish is sophisticated yet comforting. With beautiful golden golden brown top and wonderful inside texture, oatmeal soufflé is a dinner party pleaser. Serve with fresh cream on the top.

Ingredients
  • 1 cup 1% milk
  • 1 tablespoon butter
  • ¾ cup one-minute oatmeal
  • 2½ ounces lite cream cheese
  • ½ cup brown sugar
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • 3 eggs separated
  • ½ cup raisins
Directions
  1. Preheat oven to 350 °F
  2. Lightly grease a ½ quart souffle dish
  3. Heat milk and butter to near boiling
  4. Add in oatmeal and stir & cook about 1 minute until thick
  5. Remove from heat and mix in cream cheese, sugar, nutmeg, cinammon and salt and stir to blend
  6. Add egg yolks in and stir well
  7. Mix in raisins
  8. Beat egg whites until stiff but moist
  9. Gently fold into mixture until no large lumps of white appear
  10. Pour into souffle dish and bake in center of oven for 40-45 minutes until set
  11. Serve with cream poured over
