Oatmeal Chocolate Chip Cookies

Ingredients
- 1½ cups rolled oats
- ½ cup firmly packed brown sugar
- ½ cup white sugar
- (Sugars alternative - 1 cup sucanat)
- ½ cup vegetable shortening
- 1 egg
- 1 tbsp water
- 1 teaspoon vanilla essence
- ¾ cup white flour
- ½ teaspoon salt
- ½ teaspoon soda
- 6 oz chocolate chips
Directions
- Cream together shortening and sugars
- Beat in egg, water and vanilla essence
- Mix briefly
- Mix flour, salt and soda together then add to mixture
- Mix briefly
- Add oats
- Mix briefly
- Stir in chocolate chips
- Drop by teaspoons or tbsp's onto cookie sheet and bake at 375 °F preheated oven for 10-12 minutes. The brief mixing stages prevent a giant stiff ball of dough from forming before you get a chance to put the choc chips in.
- Cool completely on racks and see how long they last!
