Oatmeal Chocolate Chip Cookies

Classic oatmeal cookies

One word : yum! These absolutely delicious chocolate chip oatmeal cookies are very tasty. The choc chips help lend a gooey moist texture. If you're feeling decadent give these a try. Given the shortening and sugar content these get a low health rating so you might want to try out the other cookie recipes listed here instead.

Ingredients
  • 1½ cups rolled oats
  • ½ cup firmly packed brown sugar
  • ½ cup white sugar
  • (Sugars alternative - 1 cup sucanat)
  • ½ cup vegetable shortening
  • 1 egg
  • 1 tbsp water
  • 1 teaspoon vanilla essence
  • ¾ cup white flour
  • ½ teaspoon salt
  • ½ teaspoon soda
  • 6 oz chocolate chips
Directions
  1. Cream together shortening and sugars
  2. Beat in egg, water and vanilla essence
  3. Mix briefly
  4. Mix flour, salt and soda together then add to mixture
  5. Mix briefly
  6. Add oats
  7. Mix briefly
  8. Stir in chocolate chips
  9. Drop by teaspoons or tbsp's onto cookie sheet and bake at 375 °F preheated oven for 10-12 minutes. The brief mixing stages prevent a giant stiff ball of dough from forming before you get a chance to put the choc chips in.
  10. Cool completely on racks and see how long they last!
